Perfect Power Cookies (F)
Cookies packed with super foods like chia seeds, flax and coconut! Yummy and beneficial!

Ingredients
- 1/2 cup golden flax meal (if you have seeds grind them)
- 1/2 cup almond meal/flour
- 1/4 cup chia seeds optional
- 1/2 cup finely shredded coconut unsweetened
- 1/3 cup SweetEs fusion sweet
- 1/4 tsp mineral salt
- 1 tsp ghee or melted butter
- 2 Tbsp coconut oil
- 1 egg
Instructions
- Preheat oven to 350
- Combine dry ingredients in bowl, whisk to combine
- Add oil and butter, mix well with wooden spoon.
- Add egg mix well.
- Line cookie sheet with parchment paper.
- Form dough into 15 equal sized balls.
- Place on cookie sheet
- Press each ball flat and bake for 20 minutes.
Notes
**for Chocolate chip version, add 1/4 cup Lilys chocolate chips

Trying these today. Didn’t see an oven temp so I’m guessing at 350 degrees. Love your site. I’m 3.5 yrs into THM but love to see what other veterans put on their plates. I struggle with over indulgence of on plan foods so would love to see a sample of your day sometime. Keep up the good work…you look great!
Yes.. it’s 350. Sorry about that. I’ll have that corrected. It’s also missing an ingredient. I’m having it corrected shortly, but just in case, the first ingredient is 1/2 c golden flax meal. As to seeing what I eat, hmm.. I try to post once a day, but it doesn’t always happen. I do have those days when I go overboard, so I try to adjust the next day.
Since I am allergic to almonds, do you think I can just use all flaxmeal?
