Creating an EFB salad on the fly.
So some of you know I just got back from an 8 day work trip last night. While I make every effort to always eat on plan, unfortunately I only have so much control over how my food is prepared and what ingredients are used.
Knowing that I more than likely ingested off plan oils, as well as having had more mixed fuel meals than I normally would, I come home with “cleansing” in mind. By cleansing I don’t mean, drinking yucky stuff or taking a bunch of laxative type pills, but rather more of eating cleanly to give my body a break.
EFB meals are clean meals…they are devoid of carbs and are simply pure forms of fats supported by lots of leafy greens. Sitting on the couch thinking of what I wanted to make and decided I didn’t want to spend more than 5-10 minutes making it…so I go look in my fridge and freezer. I finds lots of veggies, some frozen cauliflower pearls, and some really yummy chicken thighs my sexy man (that’s my hubby y’all) had made. I pull out the cauliflower, some lettuce, bell peppers, scallions, cilantro, lemon juice, some seasonings and I get to work. Less than 10 minutes later, this salad was born.
