Ingredients
- 1 cup ricotta cheese room temperature
- 2 large eggs
- 2/3 cup SweetEs fusion sweet
- 2 cups SweetEs Basic Bread Blend
- 1/4 tsp baking soda
- 1 Tbsp aluminum free baking powder
- SweetEs Lemon Blueberry Sauce
- 1 cup Fresh blueberries
Instructions
- Preheat oven to 350
- Place ricotta, eggs and sweetener in bowl. Using hand mixer mix on high until creamy (about a minute)
- Add all other ingredients except blueberries, mix on low until just combined.
- Add blueberries, fold into batter using spatula until just mixed
- Divide mixture evenly into paper lined muffin tin (makes 12)
- Bake at 350 for 20 minutes.
- Top with SweetEs Lemon Blueberry Sauce
