The Most Incredible Cookies! (F)
A new twist on chocolate chip cookies that are delicious and guilt free! They really are INCREDIBLE!

Ingredients
- 2 Tbsp butter
- 2 oz cream cheese
- 1 1/2 cups shredded mozzarella cheese
- 1 cup SweetEs fusion sweet (if you like a less sweet cookie, reduce to 3/4 cup)
- 1 Tbsp vanilla extract
- 1 cup almond flour
- 1/3 cup flax meal
- 2 slices chopped cooked bacon (optional but oh so yummy)
- 1/2 cup Lily's chocolate chips
Instructions
- Place first 4 ingredients in microwave safe bowl, nuke for 1 minute.
- Remove from microwave, mix well.
- Add vanilla, almond flour & flax meal. Mix to incorporate
- Add bacon & chocolate chips, fold into batter.
- Using cookie scoop, place mounds 2” apart on parchment lined cookie sheet. Press flat with damp fingers. The flatter you press them the crisper they become. Bake at 350 for 12 minutes.

If you're not used to multitasking, pre-measure and set aside all of your ingredients before you begin.

These are fantastic! I only used 1/2 cup sugar. Note to have everything measured before you start as I had to re-melt because I took to long getting the remaining ingredients together. Also flatten down really well to get a firm cookie. And yes I did add the optional bacon!!
Lol, I’m used to multitasking and moving quickly, but if you’re not, then yes, pre-measure your other ingredients and have them ready. The flatter you press these the more they crisp up.
Can we use THM Baking Blend and if so what would the conversion be? TIA 🙂
You can try the baking blend in the same amount to equal the almond flour and the flax combined. I haven’t done this, so you’ll have to tell me how it worked out. If you do use the baking blend, I’d add an egg to the mixture to make up for the lack of moisture that the almond and flax would give.
That would make it an S, wouldn’t it? Eggs are an S.
Yes ma’am…if you look under the recipe title is says (THM-S). It’s not just eggs that are S, it’s butter, cheese, cream cheese, flax, bacon, almond flour, chocolate chips. The only items in this recipe that aren’t S are the sweetener and the vanilla 🙂

What can I use in place of the almond flour? Could I use sunflower seed flour?
I’ve never seen sunflower seed flour, let alone cooked with so I can’t speak to that. I can try this with coconut flour, but it’s not equal measure. You can try using 1/2 cup of coconut flour in place of the almond flour and see what you get…? Or would you like me to give it a shot…?
Katherine ~ I have ground sunflowers in my coffee grinder and used 1/1 as almond flour. Much cheaper, and works well. Caution – for some reason, it makes things look kinda green – some reaction that goes on, but it is NOT spoiled [withoin a few days]. Just enjoy a touch o’ the Irish, I guess! 🙂
Would not be as noticeable in chocolate, of course, but the white items are interesting!
You could serve them with green eggs and ham! 🙂

Has anyone tried these with baking blend or with Elena’s No Nuts Baking Blend? I want to make them and hubby doesn’t do almonds so I’m thinking the No Nuts Baking Blend would be a good sub.
i don’t have your sweetener. For this particular recipe, would I substitute 1 cup erythritol and 1 tsp stevia?
Because erythritol is less sweet than xylitol, you may need to use slightly more. That being said, yes you can sub in the erythritol and stevia, but…I would recommend blending/grinding it to powdered sugar consistency first.
Just made these but I made them in a small pan and baked as “brownies.” Very good. I will add extra sweetener next time because I do not use xylitol- three dogs. But the texture is fantastic. I might drizzle some melted chips on top. Thanks, Elena. (And you know me, I may add other ingredients too.)
