Ingredients
- 4 lbs chicken
Dry seasoning ingredients:
- 1/2 Tbsp mineral salt
- 1/2 tsp paprika
- 1 Tbsp rubbed sage
- 1 Tbsp smoked paprika
- 1 Tbsp granulated garlic
- 2 Tbsp curry powder
- 1 tsp black pepper
Fresh seasonings:
- 1/2 chopped medium onion
- 1/2 chopped medium bell pepper
- 3 stalks scallions chopped
Sauce seasonings:
- 2 heaping Tbsp tomato paste (or 2 8 oz cans tomato sauce)
- 1 tsp mineral salt
- 2 Tbsp curry powder
Instructions
- Make a rub of all dry seasonings. Rub chicken pieces well
- Place in large bowl or pan, add fresh seasonings, being sure to spread out and cover all chicken pieces .
- Let sit for 30 minutes for spices to absorb.
- After 30 minutes place oil in large frying pan and heat
- Add chicken pieces to fill but not overcrowd pan. (Leave onions etc in bowl)
- Brown chicken about 5 minutes per side until all pieces are browned
- Remove all chicken pieces, place in a different bowl
- Pour contents of first bowl, fresh seasonins, chicken juice, etc, into hot pan, sauté 3-4 minutes
- Add tomato sauce or paste, 1 teaspoon of salt and 1 tablespoon of curry powder, stir well to mix up all ingredients.
- Let sauté another minute or so then add all chicken pieces back into pot, fill with water to almost cover
- Turn heat down, cover and let chicken simmer for 30-45 minutes until cooked through
- Taste your sauce add more salt and curry if needed- this is dependent on how much water you use.

I’d like to make this today but unclear on amount of tomato sauce or paste.
My apologies. Just now seeing this and it’s almost 10 PM. It’s about 2 heaping Tbsp. Certain parts of the recipe rearranged themselves when they were imported over to site.
Made this tonight with spaghetti squash and salad. Delicious! The combined spices were very good. Comfort food for me.
