Moist & Spicy Muffins (F)
These seriously moist and flavorful muffins are quick and easy and great to take on the go.

Ingredients
- 1 cup mozzarella cheese
- 1 Tbsp melted buttery coconut oil
- 1 cup SweetEs All Purpose baking blend
- 1/2 tsp aluminum free baking powder
- 1/2 tsp mineral salt
- 2/3 cup SweetEs fusion sweet
- 1 Tbsp vanilla extract
- 1/4 tsp almond extract
- 1/4 tsp caramel extract
- 1 Tbsp cinnamon
- 1 tsp pumpkin pie spice
- 1/4 cup kefir
Instructions
- Preheat oven to 350
- Nuke cheese and coconut oil in microwave until melted (about 1 minute)
- Stir well to incorporate ingredients
- Add all other ingredients except kefir. Mix to incorporate
- Add kefir last - and mix well. May need to use your hands
- Spray muffin tin with coconut oil or use silicone pan
- Divide mixture evenly over 10 wells.
- Bake at 350 15-20 mins.
Notes
Chai option: add 1 teaspoon cardamom and 1/2 teaspoon of allspice 1/4 teaspoon nutmeg 1/8 tsp black pepper

Would Briana’s Baking Blend be a 1:1 ratio for your baking blend? Since I am allergic to almonds I cannot use your blend or the THM version but I can use Briana’s and just use a little bit less whenever using it for a THM / non-Briana recipe.
I can’t speak to Brianas blend either. If she says hers is comparable to THM’s and mine is as well, it stands to reason it “should” work.
