This is one of my many Ninja cooker (Did I say I love that pot!?) recipes but you can also do it stove top, just check it every 15 minutes or so and stir to be sure it cooks evenly. It’s cooked in a slightly spicy, (not too much) flavorful sauce that you can drizzle over your veggies, or whatever side dish you put with this. I serve it over spaghetti squash or riced cauliflower. It’s a perfect accompaniment.
Ingredients
- 1 family pack chicken wings (about 4-5 lbs)
- 1 Tbsp adobo seasoning
- 1/2 tsp mineral salt
- 1 tsp garlic powder
- 2 Tbsp cumin
- 10 oz can mild Rotel diced tomatoes (do not drain)
- 14 oz can fire roasted tomatoes (do not drain)
- 4 oz can diced Ortega chilies
Instructions
- Place all ingredients in pan, cover and cook on med low 45-60 minutes.
