Light & Cheesy Cheddar Biscuits ​

So I love my original SweetEs Cheddar Biscuits recipe. They seriously rock! But they doo pack quite a load calorically so I never have more than 2. I went to work on a version where I lightened the load quite a bit, but I still kept that rich cheesy flavor from the original version. So here it is!

Ingredients

  • 1 cup SweetEs All purpose blend
  • 1/2 cup flax meal
  • 1/4 tsp mineral salt
  • 1 Tbsp aluminum free baking powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp Italian seasonings
  • 1/2 tsp adobo seasoning
  • 1 Tbsp SweetEs fusion sweet
  • 4 Tbsp melted buttery coconut oil
  • 1/3 cup 0% Greek yogurt
  • 2 eggs
  • 1/3 cup unsweetened nut milk
  • 1/2 cup shredded part skim mozzarella cheese
  • 2 Tbsp shredded cheddar cheese

Instructions

  • Preheat oven to 400
  • Combine all dry ingredients in bowl, mix well
  • Add oil, yogurt, eggs, and milk mixing after each addition
  • Add 1/2 cup of cheese - fold in
  • Spray 12 well muffin tin with coconut oil spray
  • Divide batter evenly in muffin pan. (I used an ice cream scoop)
  • Top with remaining cheese
  • Bake at 400 for 8-10 minutes

Notes

Additions if desired: cooked bacon dice onions or scallions diced sweet peppers diced jalapenos Italian seasoning play with it, own it, make it yours...
