So named because it’s not the prettiest looking dish…but don’t let that fool you. What it lacks in looks it definitely makes up for in flavor! Don’t be put off by the color. Like all my other “green” dishes, TRY IT before you dismiss it.
Ingredients
- 1 cup water
- 1 cup unsweetened nut milk
- 1/2 cup frozen sliced peaches
- 1 cup fresh/frozen spinach
- 1 cup old fashioned rolled oats
- 1 tsp vanilla extract
- 1/2 tsp butter extract
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp allspice
- 1/4 tsp cloves
- 1 generous pinch mineral salt
- 2 Tbsp hydrolyzed collagen peptides
- 3 Tbsp SweetEs fusion sweet
Instructions
- Place water, nut milk, spinach, and peaches in high speed blender. Process until smooth (purée feature on my Dash 1:40)
- Pour very green mixture into saucepan to boil over high heat
- Once boiling, add all other ingredients, (except collagen) stirring to combine.
- Turn heat to medium and let cook for 5 minutes stirring frequently
- Remove from heat, add collagen and stir to combine.

Could you make this as an overnight oats and heat in the morning on the stove? (Running the blender at 5 am does not work for my sleeping one year old!)

Absolutely..or just blend the spinach and milk at night…then cook in the morning.
