This is a fairly quick and easy dish but it makes tons so it’s perfect for potlucks and dinner parties. I made this in my ninja pot which is large enough to accommodate the volume. If you’re making it stove top, then you’ll want to use an 8-10 quart pot.
Ingredients
- 2 lbs ground beef
- 8 slices of bacon
- 1/2 cup mire poix (diced onions celery, carrot mix)
- 1 Tbsp SweetEs Flavor Smack
- 4 cups riced cauliflower
- 2 lbs broccoli slaw 2 16oz bags
- 4 Tbsp liquid aminos
- 8 oz diced cubed ham
- 1 cup grated cheddar cheese
Instructions
- Brown, rinse and drain ground beef - set aside
- Using same pan, cook bacon slices til crispy - set bacon aside and discard all except 1 Tbsp of bacon grease.
- Add mire poix, to grease and cook 2-3 minutes
- Add ground beef and Flavor Smack to onion mix, stir to combine
- Add cauliflower, slaw, and liquid aminos, and 1/2 of cubed ham- mix well.
- Pour contents into large baking pan, top with cheese and balance of ham, bake at 400 for 15 minutes.
Notes
I like my veggies to retain a crunch and these do. If you prefer yours softer, cover and cook for 15-20 minutes, BEFORE pouring into baking dish.
