Back in the day (in the 90’s) there was a bakery that used to make the most incredible blondies. I ate those things as often as I could. But now in my much healthier state of mind, of course I no longer eat that way. Well…I decided to give them a shot with a THM version. And while I was at it why not make it Peanut Butter and Banana?
Ingredients
- 1/4 cup melted butter
- 1/4 cup Nutiva buttery coconut oil melted
- 1 cup SweetEs fusion sweet
- 3 large eggs
- 1 tsp vanilla extract
- 1 tsp banana extract
- 1 tsp aluminum free baking powder
- 1/4 tsp mineral salt
- 1 1/2 cup almond flour
- 1/2 cup peanut flour
- 1/2 cup Lily's chocolate chips
- 1/2 Lily’s milk chocolate bar - chopped
Instructions
- Preheat oven to 350
- In large bowl add butter, oil and sweetener, whisk until smooth
- Add eggs, extracts, baking powder and salt. Whisk to combine
- Add almond and peanut flours - mix to incorporate- then fold in chocolate chips
- Spread batter into a 9 x9 or 9x13 well greased non stick pan, sprinkle with chopped chocolate bar-bake 20-25 for 19x13 or 25-30 for 9x9.
