Lemony, pillowy, moist muffins! And LF to boot! What more could you ask for?
Ingredients
- 1 cup SweetEs All Purpose Baking Blend
- 1 Tbsp aluminum free baking powder
- 1/4 tsp mineral salt
- 1/2 cup SweetEs Fusion Sweet
- 1/4 cup 0% Greek yogurt
- 1/4 cup lemon juice
- 1/4 tsp butter extract
- 1/8 tsp turmeric optional but beneficial
- Zest of 1 lemon
Instructions
- Combine all dry ingredients in mixing bowl- whisk to combine
- Add yogurt, lemon juice, extract and turmeric. Mix well
- Grate half of lemon zest into batter - mix in.
- Scoop batter into 8 lined muffin tins- grate balance of lemon zest over tops of muffins
- Bake at 400 for 15-20 minutes.

What could I put in here to replace yogurt?
I’m not sure why you’d want to replace the yogurt? It adds tang and essentially replaces eggs as far as “glue” without adding the fats.
What should the texture of the mix be when it’s ready to go in the muffin tins? What should be the texture of the finished muffins?
It should have a normal, moist texture when finished. That being said, there are many factors that affect baking. Temperature, humidity, oven temperature, as not all are the same. I’m not sure if you experienced a problem, or something unusual as you didn’t say, but ofttimes, just cooking longer helps.
