Ahhh soup! It’s that time of year again. Time to pull out warmer clothing, closed toe shoes, and break out the soup! Here’s a flavorful beefsoup that comes to together pretty quickly and you can even play by adding veggies like squash, cauliflower, radishes and mushrooms if you want.
Ingredients
- 1 Tbsp avocado or coconut oil
- 1 lb beef cut into small cubes.
- 1/2 Tbsp mineral salt
- 1/2 Tbsp adobo seasoning
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 Tbsp dried parsley
- 1/2 tsp black pepper
- 2 cups frozen seasoning blend
- 1 cup frozen peas
- 1 stalk celery diced
- 1 cup riced cauliflower-optional
- 2 3/4 cup chicken broth
- 1/4 cup heavy cream
Instructions
- Heat pan with oil over high heat.
- Add beef plus all seasonings and cook for about 5 minutes, stirring frequently
- Reduce heat to medium- Add seasoning blend, celery and cauliflower if using, cook about 5 more minutes
- Add liquids - turn heat to low, cover and cook for 20 minutes.
