Yummy cranberry cheesecake bars. Ok a few moving parts here as you have to make the 4 layers separately, but it’s soooo worth it! Sweet, tangy, delicious, decadent and guilt free!
Ingredients
Cranberry
- 12 oz bag fresh cranberries 3 1/2 cups
- 3/4 cup SweetEs fusion sweet
- 1/4 cup fresh lemon juice
- 1/2 tsp vanilla extract
- 1/2 tsp orange extract
Crust
- 1 1/2 cups almond flour
- 1/4 cup SweetEs fusion sweet
- 1/8 tsp mineral salt
- 1/4 cup butter room temperature
Cheesecake
- 8 oz bar cream cheese room temperature
- 2 egg yolks
- 1/3 cup SweetEs fusion sweet
- 1 tsp vanilla extract
- 1/8 tsp mineral salt
Egg Whites
- 2 egg whites
- 2 Tbsp SweetEs fusion sweet
- 1/8 tsp mineral salt
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350
- 2. Make cranberry layer by adding all ingredients to saucepan and place on stove top over medium heat- mix well
- 3. Bring to a boil, turn heat to low and let cook for 20 minutes total, stirring frequently. Remove from heat once done, set aside.
- 4. While berries are cooking, make crust.
- 5. Toast almond flour in a dry skillet over high heat. Stir briskly and constantly and do not allow it to burn. If skillet gets too hot remove it from heat and continue stirring. This process is no more than 5 minutes, you want a slightly golden brown color. Remove from heat.
- 6. Add sweetener to toasted flour, mix to combine, then add butter and mix well
- 7. Line 9x9 or 10x7 pan with large piece of parchment paper - enough to overhang sides. Pour crust crumbs onto paper, press firmly until you have an even layer. Alternately you can place parchment with crumbs on counter, cover with another piece of parchment and use your rolling pin to roll out evenly. Remember it needs to fit your pan when you’re done.
- 8. Prebake crust for 10 minutes.
- 9. While crust is baking, make cheesecake layer by putting all ingredients in bowl, then mixing with hand mixer on high til creamy. Set aside
- 10. Make egg white layer by placing all those ingredients into separate bowl, mix on high 1-2 minutes til frothy.
- 11. When crust is done, spread cheesecake layer on top, followed by cranberry layer and lastly spoon egg whites over top
- 12. Bake for 30-35 minutes then turn oven off and leave dish inside for 30 more minutes
- 13. Allow to chill for at least 2 hours before cutting.
