Vanilla Soft Serve (LF)
Soft serve ice cream that’s low carb, low fat and nice to your waistline.

Ingredients
- 1 tsp grass fed gelatin not collagen
- 2 Tbsp cold water
- 2 Tbsp hot water
- 1/2 tsp sunflower lecithin
- 2 tsp vanilla extract
- 3 Tbsp SweetEs Fusion Sweet
- 1 pinch mineral salt generous
- 2 Tbsp hydrolyzed collagen peptides
- 1 1/2 cups ice
Instructions
- Place gelatin and cold water in bowl, stir until dissolved.
- Add all other ingredients, except ice - mix to combine.
- Place just the ice in food processor- process to break up.
- Add gelatin mixture - process on high until smooth.
Notes
Top with my SweetEs Lite Chocolate ganache.
