I have another scrumptious brownie recipe called Beyond Bodacious Brownies, which is totally scrumptious, but it does have a few moving parts…I’ve been wanting to play with some other nut flours besides almond and found Walnut flour at my local Walmart. I decided to use this “flour” as a base to make super easy yummy brownies and these yummy things are the final result.
Ingredients
- 1/2 cup Nutiva buttery coconut oil
- 1 1/4 cups SweetEs fusion sweet
- 1 Tbsp vanilla extract
- 1/4 tsp mineral salt
- 1/4 cup sour cream or plain Greek yogurt
- 3 large eggs
- 1 tsp aluminum free baking powder
- 1/4 tsp xanthan gum
- 3/4 cup unsweetened cocoa powder
- 1 1/2 cups finely ground walnut flour
- 6 oz strongly brewed hot coffee
Instructions
- In mixing bowl cream coconut oil, sweetener and vanilla til creamy
- Add in salt and yogurt or sour cream, mix until just combined
- Add eggs one at a time- mixing after each addition.
- Add balance of ingredients except coffee, mixing on low until combined.
- Add hot coffee, mix well.
- Scrape into greased 13 x19 pan. Shake pan to distribute evenly.
- Bake at 350 for 25-30 minutes.
- Top with crushed Lily’s chocolate bar of your choice, if desired.
