Another Really Big Pancake (EFB)
A seriously big pancake for your enjoyment any time of day. This ginourmous, but delish pancake fits the deep S parameters of the THM plan. If it’s too large to handle, you can always just make 3-4 smaller ones.

Ingredients
- 1 Tbsp oat fiber
- 2 Tbsp SweetEs slimming blend
- 1 Tbsp SweetEs fusion sweet
- 1/8 tsp mineral salt
- 1/8 tsp baking soda
- 1/8 tsp xantham gum
- 1/2 tsp aluminum free baking powder
- 1 egg
- 2 Tbsp egg whites
- 1 Tbsp Nutiva buttery coconut oil
- 1 Tbsp heavy cream (can use unsweetened nut milk)
- 2 Tbsp water
- 1/2 tsp vanilla extract
- 1/2 tsp butter extract
Instructions
- Combine all ingredients in mixing bowl, mix until smooth
- Pour contents onto heated, greased griddle, smooth out with back of spoon using circular motion.
- Cook 2-3 minutes per side until cooked through.

Wow wow wow!! Sooooo good! Just make sure you use a flat griddle or you’ll have some tough times flippin this bad boy! ? easy and so yummy!!

Lisa so true…I used a large skillet but was difficult to flip….next time I will make on the grill and make 3 smaller ones rather than one large.

Can this be made without xantham gum?
If you do I can’t guarantee what kind of texture you’ll get. You can always try it but know that oat fiber can be very dry and sandy without some help. That’s where the xanthan gum comes in.

Just WOW Elena, light fluffy and delish. While I put Slim Belly Jelly and dollop of yogurt thinking it would need some moisture…next time I will have it plain, yep, it’s that good!!! ???
