Ingredients
- 8 oz cream cheese room temperature
- 1/2 cup of butter room temperature
- 2 large eggs
- 1/4 tsp mineral salt
- 1 tsp vanilla extract
- 1 tsp banana extract
- 1/2 tsp xanthan gum
- 1/2 cup SweetEs fusion sweet
- 1 cup unsweetened coconut flakes
- 1 cup SweetEs All Purpose baking blend
- 1/2 Tbsp aluminum free baking powder
Instructions
- Preheat oven to 350
- Add cream cheese, butter, and eggs to mixing bowl- using hand or stand mixer, mix on medium until creamy
- Add salt, extracts and sweetener, mix until combined.
- Add dry ingredients - continue mixing until combined.
- Scoop into lined 12 well muffin tin
- Bake at 350 for 20-25 minutes
- Do not overbake.

Top with Almond Cream Glaze or Almond Walnut Glaze.
