This recipe is in 2 parts. The first part are the wet ingredients, the second part are the dry parts.

Ingredients
Step 1
- 1/4 c butter
- 1 oz unsweetened bakers chocolate (1 oz equals 4 squares bakers chocolate)
- 2 Tbsp instant coffee granules
- 3/4 c heavy cream
- 1 c SweetEs fusion sweet (Comparable to gentle sweet)
- 2 Tbsp coconut oil
- 2 Tbsp Nutiva buttery coconut oil (Can use butter)
- 2 Tbsp extra virgin olive oil
- 1/4 tsp mineral salt
- 1/4 c unsweetened cocoa powder
Step 2
- 1/2 c coconut flour
- 1/2 c flax meal
- 1/2 c almond flour
- 2 Tbsp unsweetened cocoa powder
- 1/4 c SweetEs fusion sweet
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 2 large eggs (see step #4 below for when to add)
- 1 tsp vanilla extract
- 1/4 tsp caramel extract
Instructions
- In saucepan over med low heat, add all ingredients from Step 1: butter, chocolate, coffee granules, cream, fusion sweet, both coconut oils, olive oil, salt and cocoa powder.
- Whisk until combined--- then remove from heat, set aside to cool
- In separate bowl add remaining dry ingredients in Step 2 - using whisk to combine, then add cooled chocolate mixture and mix well, to incorporate.
- Add in 2 large eggs - plus vanilla and caramel extract - mix well.
- Pour into greased 9x13 pan- Bake 15 minutes @ 350. Do not overbake
- While brownies are baking, get ingredients together for SweetEs Chocolicious Sauceting. When brownies are 5 minutes away from being done, make frosting. See link below

Pour SweetEs Chocolicious Sauceting over brownies as soon as they are done! Top with Coconut Pecan Topping
• TO MAKE NUT FREE VERSION:
- Omit almond flour.
- Use 3/4 cup each of flax & coconut four.
- Follow all other directions as written
- Add 1/4 cup of coconut milk after the eggs- Let batter sit for 10 minutes before baking

OK, the first time I tried this, I did it wrong (in fact, I had missed an entire part of the recipe). But doing it right today… this is the very first chocolate baked product on THM that I have loved. Not tolerated, but LOVED!!! Oh have I missed brownies!!!
I didn’t use the frosting (ran out of some ingredients) but they are great even without. Looking forward to seeing how well they hold up next day.

The coffee adds depth to the chocolate and gives it a richness it otherwise doesn’t have. You can make it without, but I’d suggest buying a small jar of instant coffee granules, just for baking purposes.
Is there a separate recipe for that crunchy topping?

There’s also a salted caramel crunch topping under condiments as well.
Elena, do you think we could use swerve with this or another THM sweetener? I can’t have xylitol in my house because of my dog.
Absolutely. Swerve or Gentle Sweet are closest. Just taste your batter and adjust as needed.
