Ingredients
Brine
- 2 Tbsp salt
- 1/4 cup vinegar
- 1 gallon water enough to cover breasts
- 3 large boneless chicken breasts
Seasonings
- 1/2 tsp mineral salt
- 1/4 tsp creole seasoning
- 1/2 tsp onion powder
- 1/4 tsp garlic powder
- 1/2 tsp thyme
- 1/2 tsp paprika
- 1/4 tsp black pepper
- 2 Tbsp Nutiva buttery coconut oil
- 2 Tbsp butter
Instructions
Brine
- Prepare brine in deep bowl - place breasts in brine making sure they’re fully covered.
- Let sit in brine 25 minutes
Finishing
- While chicken is brining, make a rub of seasonings - set aside
- At the 20 minute mark of brining, place heavy skillet on stove over medium heat - add butter and buttery coconut oil- allow to heat but not burn
- Remove chicken from brine, slice each breast in half to butterfly it- rub both sides with seasonings.
- Place into heated skillet , cook 10 minutes per side until cooked through.

I made this for dinner and it was delicious. All family members were totally loving it. Served it with mashed cauliflower and green peas (being very careful to keep to a 1/2 cup)

What does the brine process do? Add more flavor? Add moisture?
Brining meats imparts flavor and moisture and is especially helpful with “dryer” cuts like white meat chicken.

Oh my word! This was great. Full of flavor and very tender. My children said this is better than regular grilled chicken. We ran out.
