Usually thumbprints are made to be filled with something, but I decided to leave these empty. They’re awesome just as they are, don’t need a single thing, but if you’re inclined, feel free to fill with a pecan or walnut prior to baking.
Ingredients
- 1 cup almond flour
- 3 Tbsp coconut flour
- 1/3 cup SweetEs fusion sweet
- 1/4 tsp mineral salt
- 1/4 tsp xanthan gum
- 1/4 cup butter @room temperature
- 1 tsp vanilla extract
- 1/4 tsp almond extract
- 1/2 tsp caramel extract
- 1 large egg
Instructions
- Place all ingredients in mixing bowl, mix with hand mixer til combined- about 1 minute or so
- Place in fridge for 30 minutes
- Using cookie scoop place rounded mound 2 “ apart on parchment lined cookie sheet
- With wet fingers (thumb), press thumbprint into middle of each cookie.
- Bake at 350 for 10-12 minutes.

I replaced all extracts with lemon zest and the juice of one lemon.
