A come together quickly casserole that won’t have you slaving over a hot stove for long. And it’s loaded with veggies, but the kids won’t know!
Ingredients
Meat
- Meat
- 1 tsp Nutiva buttery coconut oil
- 1 lb ground white meat chicken
- 1/2 tsp mineral salt
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/8 tsp black pepper
Filling
- 1 large head cauliflower
- 1/3 cup Parmesan cheese green can
- 1 1/2 cups 2% cottage cheese
- 1/2 tsp garlic powder
- 1/2 tsp mustard powder
- 1/2 tsp mineral salt
Topping
- 8 oz sharp cheddar cheese
Instructions
- Place oil in pan over medium heat
- Add chicken and seasonings, stirring to combine. Cook chicken 5-7 minutes until fully cooked through. Remove from heat and set aside
- Chop cauliflower into noodle sized pieces, place in large bowl
- Add cottage cheese, Parmesan cheese and seasonings to bowl. Mix well to coat.
- Add cooked meat, mix til combined
- Place contents in 13 x9 dish. Spread out evenly.
- Top with cheese, bake at 350 for 20 minutes.
