Ingredients

Cupcakes

  • 1 cup coconut flour
  • 1 cup SweetEs fusion sweet
  • 1/4 tsp mineral salt
  • 1/4 tsp xanthan gum
  • 1/4 cup melted coconut oil
  • 1 can coconut milk
  • 1/4 cup lime juice fresh squeezed
  • 1/4 cup sour cream
  • 2 eggs large
  • 1 Tbsp vanilla extract

Glaze

  • 1/4 cup heavy cream
  • 1/4 cup butter
  • 2 Tbsp lime juice
  • 1 tsp vanilla extract
  • 1/3 cup SweetEs fusion sweet
  • 1 pinch mineral salt
  • 1/8 tsp xanthan gum

Instructions

Cupcakes

  • Add all dry ingredients to mixing bowl, whisk to combine
  • Add wet ingredients, mix with hand mixer for 1 minute until,well combined.
  • Let batter sit 15 minutes
  • Scoop into lined muffin pans
  • Bake @ 350 for 30 minutes

Glaze

  • Make glaze by combining all ingredients to saucepan over medium high heat
  • Bring to a boil, while whisking constantly.
  • Sprinkle xanthan gum and whisk briskly to mix well
  • Turn heat down, and let it cook for 3-4 minutes until it thickens
  • Remove from heat and spoon over cupcakes
