Cupcakes that are nut free, grain free, and almost carb free. Moist and delicious with tropical notes of coconut and lime….mmmmm light and refreshing!
Ingredients
Cupcakes
- 1 cup coconut flour
- 1 cup SweetEs fusion sweet
- 1/4 tsp mineral salt
- 1/4 tsp xanthan gum
- 1/4 cup melted coconut oil
- 1 can coconut milk
- 1/4 cup lime juice fresh squeezed
- 1/4 cup sour cream
- 2 eggs large
- 1 Tbsp vanilla extract
Glaze
- 1/4 cup heavy cream
- 1/4 cup butter
- 2 Tbsp lime juice
- 1 tsp vanilla extract
- 1/3 cup SweetEs fusion sweet
- 1 pinch mineral salt
- 1/8 tsp xanthan gum
Instructions
Cupcakes
- Add all dry ingredients to mixing bowl, whisk to combine
- Add wet ingredients, mix with hand mixer for 1 minute until,well combined.
- Let batter sit 15 minutes
- Scoop into lined muffin pans
- Bake @ 350 for 30 minutes
Glaze
- Make glaze by combining all ingredients to saucepan over medium high heat
- Bring to a boil, while whisking constantly.
- Sprinkle xanthan gum and whisk briskly to mix well
- Turn heat down, and let it cook for 3-4 minutes until it thickens
- Remove from heat and spoon over cupcakes
