Ever since the movie, I’ve always wanted to try fried green tomatoes. Well today I decided to give it a whirl, but THM style. Pleasantly surprised at how good they turned out.
Ingredients
- 1 large green tomato
- 1 tsp mineral salt divided
- 1/2 tsp adobo seasoning divided
- 1/3 cup almond flour
- 1/4 tsp onion powder
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
- 1/8 tsp cayenne pepper optional
- 1/4 cup egg whites
- Oil for frying I used avocado
Instructions
- Slice tomato into 1/8” thick slices, lay flat on a cookie sheet
- Sprinkle with 1/2 tsp salt and 1/4 tsp adobo
- In small shallow bowl, add almond flour, 1/4 tsp salt, 1/4 tsp adobo, onion and garlic powders, black pepper and cayenne. Stir to combine
- In second small shallow bowl, add egg whites and last 1/4 tsp salt, mix well.
- Place frying pan with oil on stove over medium high heat.
- Dip each slice into egg whites, then into almond flour, being sure to coat each piece completely.
- Drop into hot pan, fry each side about 2 minutes, being careful not to burn them.
- My tomato yielded 8 slices

Made these last night and they were delicious and very easy to make. I was out of avacado oil so I used the last of the peanut oil I had and added some coconut oil.
The tomatoes were very sweet.
