Ingredients
- Oil for frying I used coconut
- 3 tilapia filets I used previously frozen individual filets
- 2 Tbsp apple cider vinegar
- 1/4 tsp creole seasoning
- 1/4 tsp adobo seasoning
- 1/4 tsp garlic powder
- 1/4 tsp black pepper
Dredge
- 1 egg
- 1 Tbsp mayonnaise
- Pinch of salt
Breading
- 2 Tbsp almond flour
- 2 Tbsp Parmesan cheese can
- 2 Tbsp oat fiber
- 1/4 tsp onion powder
- 1/4 tsp creole seasoning
- 2 Tbsp Parmesan cheese can

Instructions
- Place tilapia in single layer in dish, pour apple cider vinegar over both sides.
- Season with creole, adobo , garlic and black pepper - set aside.
- Place oil in pan to heat - then turn down to medium
- In shallow bowl, beat egg, mayo, and salt together - set aside.
- In another bowl or platter mix breading ingredients (be sure it’s flat/wide enough to fit your filets)
- Dip tilapia into egg mixture , then into breading mixture coating both sides. Drop into hot pan, fry 3 minutes per side.

This breading is delicious. I even used it on some Mexican squash to make a breaded zucchini substitute for my mom. The entire family loved it, even the non-THMers.
