The thought of sitting down, planning my meals for a week or two or four…makes me insane!

Spending a little time on the weekends, maybe an hour or two, though, will save you many hours during the week.

I take a couple hours every weekend to prepare and bake up some goodies like muffins or cookies, or cakes and definitely some side dishes. I try to make an E dessert as well as an S dessert in addition to side dishes of both fuels.

I make up a batch of my SweetEs Oatmeal cookies or my SweetEs Power cookies or one of my fabulous cakes, that are so decadent they make you want to slap somebody!

I prep the veggies for my side dishes  ahead of time, to make it easier and quicker to make these dishes, as I never quite know what I want ahead of time. This way I’m ready for whatever. I buy 2-4 heads of cauliflower, cut and chop 2 heads into larger chunks for use in dishes like my SweetE’s mac n cheese, or my SweetE’s robust cauli roast. I “rice” the other two heads in my food processor until the crumbles resemble rice grains, and this I use in cauli fried rice, or cauli mashed potatoes.  I bag each of these and freeze them. I take out what I need as I need it, and the rest stays in the freezer. As long as you expel the air before sealing the baggie, this will last for months!

I buy things in bulk ,divide them into smaller portions and freeze accordingly.  I keep staples in my freezer like Birdseye frozen brown rice, roasted sweet potatoes and cauliflower rice.  I often brown a pound of ground beef or two, drain, rinse under hot running water, then freeze this as well.  This is now ready to be added to any meal type, simply by adding it and the appropriate seasonings. If I need it in a fat based meal, I just add it back in.  I can have a meal ready in 15-20 minutes with these make ahead preps. So…Are you prepared?
