So I love my original SweetEs Cheddar Biscuits recipe. They seriously rock! But they doo pack quite a load calorically so I never have more than 2. I went to work on a version where I lightened the load quite a bit, but I still kept that rich cheesy flavor from the original version. So here it is!
Ingredients
- 1 cup SweetEs All purpose blend
- 1/2 cup flax meal
- 1/4 tsp mineral salt
- 1 Tbsp aluminum free baking powder
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp Italian seasonings
- 1/2 tsp adobo seasoning
- 1 Tbsp SweetEs fusion sweet
- 4 Tbsp melted buttery coconut oil
- 1/3 cup 0% Greek yogurt
- 2 eggs
- 1/3 cup unsweetened nut milk
- 1/2 cup shredded part skim mozzarella cheese
- 2 Tbsp shredded cheddar cheese
Instructions
- Preheat oven to 400
- Combine all dry ingredients in bowl, mix well
- Add oil, yogurt, eggs, and milk mixing after each addition
- Add 1/2 cup of cheese - fold in
- Spray 12 well muffin tin with coconut oil spray
- Divide batter evenly in muffin pan. (I used an ice cream scoop)
- Top with remaining cheese
- Bake at 400 for 8-10 minutes

Additions if desired: cooked bacon dice onions or scallions diced sweet peppers diced jalapenos Italian seasoning play with it, own it, make it yours...
