No fuss, no muss, quick n easy Mac n cheese. This recipe works best with fresh cauli versus frozen. Frozen will produce a lot of excess liquid. I like mine with a bit of crunch so I don’t pre-steam first, but you can if you prefer. If you do steam it, squeeze the water out first!
Ingredients
- 1 cup chopped cauliflower
- 2 Tbsp 2% cottage cheese
- 2 Tbsp fresh Parmesan cheese
- 1/4 tsp adobo seasoning
- 1/8 tsp creole seasoning
- 2 Tbsp mozzarella cheese shredded
Instructions
- Preheat oven to 400
- Mix all ingredients in bowl - except mozzarella
- Place in large ramekin, top with mozzarella
- Bake 20 minutes til brown and bubbly.
