Out of This World Granola (F)

Ingredients
- 2 Tbsp Nutiva buttery coconut oil
- 1 cup old fashioned rolled oats
- 1 cup unsweetened coconut flakes
- 1 cup lightly crushed pecans
- 1 cup slivered almonds
- 1/2 cup SweetEs fusion sweet
- 1/4 tsp mineral salt
- 1 tsp vanilla
- 1/2 tsp pumpkin pie spice
- 1/2 tsp cinnamon
- 2 Tbsp butter
- 2 Tbsp heavy cream
- 1/2 tsp vanilla
- 2 Tbsp SweetEs fusion sweet
- 1 Pinch mineral salt
Instructions
- Preheat oven to 350
- Heat buttery coconut oil in large frying pan over medium heat.
- Add next 6 ingredients- stirring well to mix.
- Add vanilla, pumpkin pie spice and cinnamon. Mix to combine and continue stirring for the next 10 minutes. Do not allow it to burn.
- Pour mixture into foil lined cookie sheet and spread out in even layer.
- In small saucepan over medium high heat, add last 5 ingredients. Bring to a roiling boil and continue cooking for about a minute.
- Spoon over granola mixture bring sure to coat all of it.
- Place in oven, and bake 6-7 minutes. CHECK IT EVERY 2 MINUTES. IT WILL EASILY BURN IF NOT WATCHED.

This was so easy, I used a large dutch oven to contain all of the granola before I put it in the oven. I had cereal for breakfast!!! Thank you for your creative mind. God has truly blessed you.

Elena, since I dont do nuts, can i use 2 cups of oats and 2 of coconut?

You want your proportion of oats to be 1/2 or 1/4, that of the coconuts. If you can find coconut chips that are unsweetened, and coconut flakes as well as shredded coconuts, you can use all three (1 cup each) and then add your 1 cup of oats.
