SweetEs Oxtails

There are two things my hubby loves, well three if you include me..hahaha, but we are talking food here… he loves wings and he loves oxtails. We usually only get oxtails when we visit Jamaican restaurants and I wanted to make him something special for our anniversary, soooo this was born. He completely cleaned his plate!

This requires a pressure cooker or cooking on stovetop for at least two hours!

Ingredients

  • 4 lbs oxtails- ok if frozen
  • 1 Tbsp mineral salt
  • 1 Tbsp SweetEs fusion sweet
  • 1 tsp paprika
  • 1/4 tsp cayenne pepper
  • 1/4 tsp black pepper
  • 1 Tbsp Worcestershire sauce
  • 2 Tbsp liquid aminos
  • 2 Tbsp avocado oil
  • 3 medium carrots rough chopped
  • 1 medium onion rough chopped
  • 3 stalks celery rough chopped
  • 2 stalks scallions rough chopped
  • 4 clove garlic rough chopped
  • 8 sprigs fresh thyme (if dried use 1 Tbsp)
  • 1 sprig fresh rosemary (if dried use 1 Tbsp)
  • 4 cups beef broth
  • 1 8 oz can tomato sauce

Instructions

  • Place oxtails in large bowl, then add the next 7 seasoning ingredients.
  • Toss well to fully coat all pieces
  • If your pressure cooker has a searing option, add avocado oil to pan, then brown oxtails on all sides. Do not pour in seasoning liquids. If your pressure cooker doesn’t sear, brown your oxtail stovetop first, being sure to brown all sides
  • While meat is browning, rough chop your fresh veggies
  • After browning is complete, add all chopped veggies to pot, along with seasoning juices left in bowl.
  • Add in meat, broth, and tomato sauce.
  • Cook on high under pressure for 50 minutes - or stove top on low for about two hours.
  • Skim and discard the fat (close to 2 cups of it!) then enjoy with your favorite side!
