While I love my Popeye’s Cup of Joe, depending on what you’re pairing it with, you’ll sometimes need to lighten up on those fuels.
So I’ve put Popeye on a diet with this lighter, equally creamy version of my spinach coffee.

Ingredients
- 10 oz brewed coffee
- 1/2 Tbsp SweetEs CWSM
- 1/4 tsp sunflower lecithin replaces the creaminess of missing oil from original recipe
- 1 pinch mineral salt
- 2 Tbsp SweetEs fusion sweet
- 1/2 tsp butter extract
- 1 tsp vanilla extract
- 1/2 tsp Nutiva buttery coconut oil
- 1 tsp MCT oil
- 1 handful fresh spinach I buy big bags of fresh and freeze
Instructions
- Place all ingredients in high-speed, heat-proof blender. Blend until completely smooth and frothy (I use the purée feature on my Dash)
