It’s pumpkin season. Everywhere you look, there’s pumpkin everything, so why not chocolate chip cookies?!
Ingredients
- 1/2 cup pumpkin purée
- 2 oz cream cheese- room temperature
- 2 Tbsp Nutiva buttery coconut oil
- 1/2 cup SweetEs fusion sweet
- 1/4 tsp mineral salt
- 1 tsp vanilla extract
- 1 tsp blackstrap molasses
- 1/4 tsp pumpkin pie spice
- 1/4 tsp cinnamon
- 2/3 cup almond flour
- 1/3 cup coconut flour
- 1/2 cup Lily's chocolate chips
Instructions
- Preheat oven to 350
- In mixing bowl combine all ingredients (first nine), EXCEPT flours and chocolate chips - mix until well combined
- Add in flours- mix well
- Fold in chocolate chips. Mix until just combined.
- Refrigerate batter for 15 minutes
- Using cookie scoop place cookies 2” apart on parchment lined cookie sheet—press flat with fingers (the flatter they are the more they crisp up)
- Bake at 350 for 13 minutes
