Ingredients
- 1 stick grass fed butter 1/2 Kerrygold bar
- 3 wedges of jalapeño Jack Laughing Cow cheese
- 1 c SweetEs fusion sweet
- 1 egg plus 1 egg white
- 1/2 c SweetEs All Purpose baking blend
- 1/2 c ground flax meal
- 1/2 tsp baking soda
- 1/2 tsp mineral salt
- 1/2 tsp black pepper
- 2 c unsweetened shredded coconut
- 1/2 c shredded mozzarella cheese
- 1 tsp vanilla extract
- 1/2 tsp almond extract
- 1/3 c finely diced red bell pepper
- 4-6 slices of cooked bacon finely diced
- 3/4 c Lily's chocolate chips
Instructions
- Preheat oven to 350
- Cream butter, laughing cow cheese and sweetener in food processor or mixer until well combined.
- Add egg & whites - mix until just incorporated
- In separate bowl, combine dry (next 8) ingredients. Mix well.
- Add dry ingredients to bowl with wet ingredients - mix well
- Add balance of ingredients - Mix until combined
- Form 2" balls and space 2" apart on parchment lined cookie sheet.
- Press flat
- Bake at 350 for 13-15 minutes.
