Ingredients
- 1 c blueberries
- 1/2 c plus 2 Tbsp SweetEs fusion sweet- divided
- 1/4 tsp mineral salt
- 1/4 c of water
- 2 Tbsp of lime or lemon juice
- 1 c SweetEs All Purpose baking blend LF
- 1/2 Tbsp alumimun free baking powder
- 1/2 c 0% Greek yogurt I use Fage
- 1/4 c egg whites carton or fresh
- 1 Tbsp MCT oil
- 1/2 tsp vanilla extract
- 1/2 Tbsp banana extract
Instructions
- Preheat oven to 350
- Place blueberries, 1/4 cup of fusion sweet, water, salt and lemon juice in saucepan on medium heat and bring to a boil. Use potato masher to break up blueberries and let simmer for 5 minutes. Place baking blend, baking powder, and balance of gentle sweet in bowl - whisk to combine Add blueberry mixture to baking blend, mix well. Add Greek yogurt, mix well Add all other ingredients mix until combined. Spray a 6 cavity donut pan with cooking spray and divide mixture evenly in wells of pan. Let sit for 10 minutes, then bake at 350 for 25 minutes until inserted toothpick comes out clean. If needed bake an additional 5 minutes.
Notes
- you can also bake these as muffins. Just use a muffin pan and follow same directions. You may need to bake an additional 10 minutes
- 2 dough-nots--or 2 Muffins are LF

can I use THM baking blend in place of the sweetE’s baking blend? It’s what I have on hand already. If so how would it measure?
Yes, you may. And for the sweetener you can use gentle sweet
