Baked goods that are extra slimming and don’t contain nuts or seeds are virtually impossible to find. To that end I worked on creating this blend to allow you to make goodies that fit the EFB mold and satisfy that need. Now you can have your cake and eat it too! While this blend on its own has no fuel, the dishes you create with it will fit the EFB parameters once you’ve added the fuel. Please note: this is a much drier mix than the All purpose blend and cannot be subbed in place of it without some adjustments to the recipe.
Ingredients
- 1/2 c whey protein isolate (plan approved)
- 1/2 c hydrolyzed collagen peptides
- 1/2 c oat fiber
- 1/4 c psyllium husk flakes
- 1 Tbsp aluminum free baking powder
- 1/4 tsp glucomannan
Instructions
- Place all ingredients in bowl. Whisk to combine.
- Store in sealed container or Mason jar.

How does this measure to sub for THM baking blend? I have a daughter in law that is allergic to all nuts and coconut.
This is very different from the THM blend and is intended for recipes that have been finessed to work with this much drier blend. I wouldn’t use this one as a replacement for the THM but you can give the No Nuts About it blend a shot. That was created for my coaching client with nut allergies.
Can this blend be used for thickening?
Our blends don’t behave like flour in that they do not thicken things.. they disintegrate and get kinda sandy. Depending on what you are trying to thicken, you could use gluccie (but go easy or you’ll have slime) or you can blend up veggies which is what I do for sauces and gravies.

If you mean as thickeners, I use onions, bell peppers and some tomatoes, that I toss into a blender then into a saucepan.

You can give it a shot. Try upping the xanthan gum by 1/4 tsp though…
Could use use psyllium powder rather than psyllium flakes (would quantity change)?
Yes, you may. Use 2/3rds the amount of flakes called for.
