Ok, so everyone has chocolate a chip cookie recipe. In fact, I have 5 or 6 of them and I believe several are already on my site. Why another? Well I’m always on a quest to make things better…not to mention, I had no idea what I was making when I started measuring out ingredients…so here’s yet another chocolate chip cookie recipe!!! It likely won’t be my last…hahaha!
Ingredients
- 2 cups almond flour
- 1/2 cup SweetEs All Purpose baking blend
- 1 1/2 cup SweetEs fusion sweet
- 1/4 tsp baking soda
- 1/2 tsp mineral salt
- 1/2 cup butter
- 1/4 cup Nutiva buttery coconut oil room temperature
- 3 Tbsp vanilla extract
- 1 tsp blackstrap molasses
- 2 large eggs room temperature
- 1 cup Lily's chocolate chips
Instructions
- Place all dry ingredients in mixing bowl - whisk to combine
- Add butter and coconut oil and cut into dough until it resembles coarse crumbs.
- Add vanilla and molasses, mix well
- Add two beaten eggs, and work into dough. It works best if you use your bare hands and squeeze eggs into mix. Be sure to remove all rings before doing so. It’s messy but it works best.
- Fold in chocolate chips.
- Place 2” apart on parchment lined cookie sheet- bake at 350 for 15 minutes per batch. Makes 50 cookies

There’s no serving size, but these are cookies, therefore they’re a dessert, so proceed accordingly. They’re so rich you really only need a couple.
