Blueberry Ricotta Muffins (F) ​

Instructions

  • Preheat oven to 350
  • ​Place ricotta, eggs and sweetener in bowl. Using hand mixer mix on high until creamy (about a minute)
  • Add all other ingredients except blueberries, mix on low until just combined.
  • Add blueberries, fold into batter using spatula until just mixed
  • Divide mixture evenly into paper lined muffin tin (makes 12)
  • Bake at 350 for 20 minutes.
  • Top with SweetEs Lemon Blueberry Sauce
