ricotta cheese
room temperature

eggs
2/3
cup
SweetEs fusion sweet
2
cups
SweetEs Basic Bread Blend
1/4
tsp
baking soda
1
Tbsp
aluminum free baking powder
SweetEs Lemon Blueberry Sauce

Fresh blueberries
Instructions
Preheat oven to 350
Place ricotta, eggs and sweetener in bowl. Using hand mixer mix on high until creamy (about a minute)
Add all other ingredients except blueberries, mix on low until just combined.
Add blueberries, fold into batter using spatula until just mixed
Divide mixture evenly into paper lined muffin tin (makes 12)
Bake at 350 for 20 minutes.
Top with SweetEs Lemon Blueberry Sauce
