Ingredients
Coconut oil cooking spray
1/2cupegg whites
pinchGenerousof mineral salt
1tspnutritional yeast
1tspdiced onions
1tspdiced scallions
1Tbsp chopped parsley
1/4cupdiced bell peppers
1/4cupdiced tomatoes
cracked black pepper
Instructions
Spray skillet lightly with cooking spray - place over medium heat
In bowl whisk egg whites, salt, nutritional yeast and black pepper to taste
Add all chopped veggies to skillet, sauté for 1 minute stirring frequently
Add egg whites mix to combine. Cook until set
Notes
Tip: I buy pre-diced onions, scallions, and bell peppers, or I buy them whole and spend some time dicing large batches, which I then freeze for use as needed. I also keep a carton of egg whites in my fridge at all times.
