Heat oil in large skillet over medium high heat
While oil is heating, slice sausage into diagonal 1/4” thick slices.
Add sausage to hot oil and cook for approximately 2 minutes per side. Remove from oil and set aside.
Add seasoning blend to skillet-being careful as it will splash and sputter. (I hold a lid facing away from me, on the edge of pan and pour ingredients behind it- closing it immediately)
Add Cajun seasoning and salt to seasoning blend, stir until well combined.
Add riced cauli and mix well Cook this mixture for 5 minutes, stirring frequently, then remove from pan and set aside.
Add 2 large eggs to pan, scramble eggs, cook til set. Once set, add cauli mix and sausage back to pot, mix to combine, then sprinkle with cheese.
Cover mixture with lid, turn heat off, and allow mixture to sit for 5 minutes.
Serve immediately. Garnish with avocado if desired.
