Tired of boring scrambled eggs? I know I was; not that I ever do boring, but I definitely wanted something different. I’m always trying to find ways to get veggies in, so I thought, why not add some to my eggs! And while I’m at it, let’s ramp up the flavor.
This was perfect over a bed of chopped romaine and drizzled with my ACV Syrup!

Ingredients
1TbspNutiva buttery coconut oil
1mediumtomatochopped
1/4cupdiced red peppers
2Tbspdiced cubanelle peppersoptional
2Tbspdiced cilantro
1Tbspdiced onions
1/4tspcreole seasoning
3/4cupfrozen diced cauliflower
4large large eggs
1/4tspmineral salt
1/8tspgarlic powder
1/8tsponion powder
1Tbspnutritional yeast

Instructions
Heat oil in large skillet over high heat for one minute
Add all chopped veggies, except cauliflower, sauté for 3 minutes
Add cauliflower and creole seasoning, saute an additional2-3 minutes
While veggies are cooking, crack eggs in medium bowl, add dry seasonings, and beat with fork till fluffy.
Make well I center of veggie mix in skillet, pour in beaten eggs.
Gently fold into veggies, flipping until just set; about 2 minutes. Remove from skillet immediately to stop cooking process.
