Place cheeses in microwave safe dish. Nuke approximately 60-90 seconds to melt.
Place melted cheeses, and all other ingredients in food processor, process until combined. Batter will be very sticky.
Scoop evenly into 2 muffin pans. I used a 12 cup and a 6 cup- made 18 muffins. Bake at 350 for 20 minutes.
While muffins are baking, make cream cheese glaze.
Glaze
Place all ingredients except cream cheese in saucepan over medium heat- whisk to combine.
Add cream cheese, turn heat to low and allow it to soften about 5 minutes.
Whisk to combine. Mixture will be chunky. Pour mixture into heat proof blender, blend until smooth, then return to saucepan and let simmer for 5 minutes. Remove from heat.
When muffins are done, allow to cool for 5 minutes, then cut each muffin into 4 pieces.
Place 1/2 of bites in single layer in serving dish.
Drizzle with 1/2 of sauce. Repeat process with rest of bites and sauce.
Cinnamon Sugar
Mix all ingredients in small bowl. Sprinkle over top of dish.
Cinnamon Butter Sauce
Place all ingredients in saucepan over medium heat- heat until just melted.
