Colossal Chocolate Chip Cookie (F)

Ingredients
- 2 Tbsp SweetEs All Purpose baking blend (comparable to THM baking blend)
- 1 Tbsp oat fiber
- 2 Tbsp SweetEs fusion sweet (comparable to THM gentle sweet)
- 1 Tbsp butter
- 1/2 tsp vanilla
- 1/2 tsp butter extract
- 1/4 tsp blackstrap molasses (optional, but really rounds out flavor)
- 1 generous pinch mineral salt
- 1 large egg
- 2 Tbsp Lily's chocolate chips
Instructions
- Preheat oven to 400
- Place oven proof skillet in oven- allow it to heat
- Combine all ingredients except choc chips in mixing bowl - mix to combine
- Remove skillet from oven and spray with cooking spray- reduce heat to 350
- Scrape dough into pan, smooth with spatula.
- Sprinkle chocolate chips on top and bake at 350 for 10 minutes
