Easy Chicken Enchiladas (F)

Ingredients

  • 1 lb precooked chicken breast
  • 8 oz sour cream
  • 12 oz jar La Victoria green salsa mild
  • 4 oz can of diced green chiles
  • 1/2 cup diced scallions
  • 1/2 tsp mineral salt
  • 1/2 tsp garlic powder
  • 2 tsp cumin
  • 8 oz shredded sharp cheddar cheese.
  • 1 package 8 count low carb tortillas 6 net carbs or less

Instructions

  • Shred precooked chicken into bowl
  • Add all other ingredients except cheese and mix well
  • Add half of the cheese to filling mixture -mix in to combine - reserve other half of cheese
  • Spoon about 3 Tbsp of mixture of not each tortilla, roll and place into 9x 9 pan. Repeat process until all tortillas are rolled and on pan.
  • Scrape balance of filling on top of rolled tortillas - spread out to cover- then top with balance of cheese
  • Bake at 350 for 20 minutes.
