Elena’s Hawaiian Bread (LF)

Ingredients

  • 1 cup egg whites - from carton
  • 2 large eggs
  • 1/2 tsp xanthan gum
  • 1 cup 0% Greek yogurt
  • 1/2 Tbsp apple cider vinegar
  • 1/2 tsp THM pineapple extract
  • 1/2 tsp almond extract
  • 1 tsp mineral salt
  • 1/2 cup whey protein isolate
  • 1/4 cup hydrolyzed collagen peptides
  • 1 Tbsp aluminum free baking powder
  • 1/2 cup SweetEs All Purpose baking blend (Can use THM baking blend)
  • 1/4 cup oat fiber
  • 1/3 cup SweetEs fusion sweet (can use gentle sweet)
  • 1 tsp ginger powder

Instructions

  • Preheat oven to 350
  • Place eggs whites, eggs, and xanthan gum, in blender, blend til thick and fluffy, about 1 minute
  • Add all other wet ingredients- blend 1 minute
  • Add all dry ingredients, blend until fully incorporated- about 2 minutes
  • Grease a glass loaf pan with about 2 tsp of melted buttery coconut oil. Pour batter into baking pan, bake 45-50 minutes at 350.
