Ingredients

  • 1 Tbsp buttery flavor coconut oil
  • 1 1/2 cups riced cauliflower
  • 1/4 cup frozen peas
  • 1 Tbsp liquid aminos
  • 1/4 tsp adobo seasoning
  • 1/8 tsp onion powder
  • 1/8 tsp garlic powder
  • 2 large eggs

Instructions

  • Heat oil in pan over high heat
  • Add all ingredients except eggs, mix well.
  • Cook 3 minutes, then make well in center of “rice” by pushing it against sides of pan with spatula.
  • Break each egg into center of well, scramble into mixture. Cook 1-2 minutes.
