Green & Tangy Beefy Rice (LF) ​

Ingredients

  • 1 lb regular fat ground beef
  • 1 12 oz package of frozen cauliflower rice/pearls
  • 1 Tbsp apple cider vinegar
  • 1 Tbsp lemon juice
  • 1 Tbsp cumin
  • 1/2 tsp mineral salt
  • 1/2 tsp adobo seasoning
  • 1/4 tsp creole seasoning
  • 1/4 bunch chopped cilantro
  • 1 12 oz jar La Victoria thick n chunky green salsa

Instructions

  • Brown ground beef over medium high heat until all fat is rendered (5 minutes)
  • Pour into colander and rinse under hot running water
  • Return empty skillet to stove, add cauliflower, vinegar, lemon, and all other ingredients except salsa and meat.
  • Stir and allow to cook for 2-3 minutes- then add in ground beef and jar of salsa mixing to combine.
  • Cook an additional 2-3 minutes. Remove from heat.

Notes

Enjoy as is as an LF meal, or pair with half an avocado for a succulent F meal. You can even top with some cheese, along with the avocado!
