Juicy Smothered Thighs (F)

Ingredients

  • 1 Tbsp coconut oil use refined if coconut taste bothers you
  • 8 boneless skinless chicken thighs
  • 1 tsp creole seasoning
  • 1/2 tsp mineral salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp dried basil
  • 1 tsp rubbed sage
  • 1 tsp dried thyme
  • 12 oz tomato sauce 1 1/2 cups
  • 1 small onion (chopped)

Instructions

  • Heat ninja pot on high setting, or skillet on stove under high heat
  • Add coconut oil...allowing oil to heat (1-2 minutes)
  • While pot is heating, season thighs with all seasonings, rubbing each piece well to coat completely
  • Add chicken to hot pot. Turn heat to low setting on pot, (or med low on your stove), cooking about 10 minutes each side.
  • Add chopped onions and tomato sauce to pot, stir, then cover and allow to simmer for 20 minutes (turn stovetop to low while simmering )
