apple cider vinegar

seasoning blend (or 1/2 C each
chopped bell peppers & onions)

parboiled brown rice
I used Minute rice
Instructions
Pour peas into bowl and rinse and clean well.
Quick soak peas by adding 6 cups water and apple cider vinegar to a large pot, then adding rinsed peas.
Cover and bring to a roiling boil, cooking for 5 minutes.
Remove from heat, and let peas sit covered for an hour
Drain and rinse “soaked” beans, discarding soak water, then return peas to pot.
Add all other ingredients except seasoning blend and rice.
Cook covered, for 60 minutes over low heat.
Add the rice and seasoning blend, stir to mix well, cover and cook an additional 30 minutes
