Pickled Daikon Radish (LF)

Ingredients

Brine

  • 1/2 cup apple cider vinegar
  • 1/2 cup rice wine vinegar no sugar added
  • 1/2 cup water
  • 1/2 tsp mineral salt
  • 4 Tbsp SweetEs fusion sweet

Pickles

  • 1 12 inch daikon radish
  • 1 Tbsp salt

Instructions

  • Make brine by combining ingredients and mixing well. Set aside
  • Wash, peel, and cut radish into desired shape. I opted for sticks like French fries.
  • Place radish in bowl with 1 Tbsp salt. Rub well, the let sit for 15 minutes.
  • Drain and rinse radish after 15 minutes
  • Place radish in pint sized mason jar, cover with brine, refrigerate for 24 hours. Store in fridge for up to one month.
