Ingredients
- 1 c grated zucchini equivalent 1 medium
- 2 c grated sweet potato equivalent 1 medium
- 1/2 c sprouted spelt flour*
- 1/2 c sprouted rye flour*
- 1/2 Tbsp aluminum free baking powder
- 1/2 tsp mineral salt
- 3 Tbsp SweetEs fusion sweet
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1 Tbsp raw honey
- 1/2 tsp of almond extract
- 1 tsp vanilla extract
- 1/2 tsp liquid cinnamon extract or 2 teaspoons powder Watkins
- 1/2 c unsweetened applesauce
- 1/2 c egg whites
Instructions
- Put squash and sweet potato in food processor..process until the pieces looked grated (or grate by hand)
- In separate bowl, add all dry ingredients whisk well to combine
- Add wet ingredients to bowl, mix well.
- Add sweet potato squash mixture to bowl, mix until incorporated.
- *can use 1 cup of any sprouted flour - spelt, rye, or wheat..in place of two 1/2 cups
- Pour mixture evenly into well of sprayed muffin tin.
- Bake for 35-40 minutes.
